Give the potatoes a good scrub and pat them dry. Rub each potato with a light coating of olive oil and sprinkle with a bit of kosher salt or coarse sea salt.
Place the potatoes in the air fryer basket. Set the air fryer to 390°F and cook 40-45 minutes until the skin is crisp and the potatoes feel soft.
Split the potatoes open, add your favourite toppings and enjoy!
