Rinse and dry the shrimp then make a few shallow cuts on the inside curve. Place in a bowl and marinate for 15-20 minutes.
Cut the egg roll wrappers in half diagonally. Then remove the shrimp from the marinade and wrap each one in half of a wrapper.
Place the shrimp in a single layer in the air fryer basket, brush or spray with oil and cook 8-10 minutes until crisp.
