Medium size shrimp
Place the shrimp in a bowl, add the flour, cornstarch, garlic powder and salt and toss to coat.
Whisk the eggs in a bowl, then dip the shrimp in the eggs and turn to make sure they are fully coated.
Dip the egg washed shrimp in the coconut making sure to fully coat.
Place the shrimp in the air fryer basket and spray with a bit of olive oil spray. Cook at 370°F for 7-9 minutes until crisp and golden.
