Slice each zucchini in half crosswise, then slice each piece in half lengthwise and then slice each in half lengthwise again. You will end up with 8 sticks.
Dip each zucchini in the flour making sure they are well coated and then tap off the excess.
Dip the floured zucchini sticks in the egg wash turning a couple of times to make sure they are fully coated.
Mix the breadcrumbs and seasoning in a shallow bowl or plate. Dip the zucchini in the breadcrumb mixture and turn to fully coat the zucchini sticks in the breading.
Place the zucchini in the air fryer basket in a single layer. Spray the tops lightly in olive oil and cook at 380°F for 10-12 minutes.
