Bake the potatoes until soft. Then slice them in half and scoop them out leaving a bit of potato behind to give the skin some structure.
Combine all of the ingredients for the filling in a large bowl and mix until well blended.
Stuff the potato skins nice and full and place them in a single layer in the air fryer basket. Bake until hot, bubbly and golden brown.
