Air fryer spaghetti squash makes a delicious side dish or can be used in place of pasta in any of your favourite dishes. Cooked in the air fryer the squash comes out perfect every time.

Ingredients

  • 1 2-Pound spaghetti squash
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • ½ tsp garlic powder
  • ¼ teaspoon kosher salt or salt to taste

Instructions

  • Using a sharp, heavy knife, carefully cut the squash in half lengthwise.
  • Use a spoon to scrape out the seeds and stringy flesh from the middle of each squash half.
  • Drizzle the inside of each half with olive oil and sprinkle with the seasonings.
  • Place the squash cut side up in the air fryer basket. Place the basket in the air fryer and set it to 360°F. Cook the squash for 20-25 minutes until the flesh is soft, but has just a bit of resistance when pierced with a fork.
  • Remove the squash from the air fryer. To make the noodles, drag a fork through the length of the squash creating strands.
  • Serve as desired.

Notes

I can fit both halves of a 2-pound squash in my 5.8qt air fryer basket.  If you are using a larger squash you may need to cook half at a time.  You may also need to increase the cooking time.
